
Ingredients:
1 medium cauliflower (grated or processed into rice-like texture)
1 cup mixed vegetables (carrot, capsicum, beans, peas)
1 tbsp olive oil
1 tsp soy sauce (low sodium)
1 tsp ginger-garlic paste
Salt and pepper to taste
Fresh coriander for garnish
Instructions:
1. Heat olive oil in a non-stick pan. Add ginger-garlic paste and sauté for 30 seconds.
2. Add mixed vegetables and stir-fry for 3–4 minutes.
3. Add the grated cauliflower and mix well.
4. Sprinkle soy sauce, salt, and pepper. Cook for another 5 minutes until the cauliflower softens.
5. Garnish with coriander leaves and serve hot.
